Job Title: Sous Chef Pastry

Rixos Golf Villas And Suites Sharm El Sheikh, a luxurious resort located in the heart of the city, is seeking a highly skilled Sous Chef Pastry to join our culinary team. As a key member of our kitchen staff, you will be responsible for assisting the Executive Sous Chef in the operation of all kitchen units, ensuring the highest standards of quality, hygiene, and presentation of all food produced.

Key Responsibilities:
  • Assist the Executive Sous Chef in the full operation of all kitchen units, ensuring compliance with kitchen hygiene rules and personal grooming standards.
  • Identify work methods and cooking standards to ensure food is prepared in a quality manner and personnel work efficiently.
  • Coordinate with all section chefs and provide instruction as needed, controlling the presentation and quality of food prepared for breakfast, lunch, and dinner.
  • Prepare material purchase lists, place orders, and check quality of purchased ingredients, managing daily provision vouchers and optimizing the circulation of slow-moving supplies.
  • Check cooling systems of food storage and ensure proper food usage according to FIFO principles, planning food production in accordance with stages identified by the Executive Culinary Chef.
  • Monitor raw foods and provisions, manage excess food usage, and control portion sizes, preparing standard recipes for all foods to standardize portions, taste, and quality.
  • Ensure compliance with personal hygiene rules among kitchen personnel, maintaining records for the food safety system and checking storage areas for orderliness and managing food usage efficiently.
  • Monitor menu items and inform personnel of missing or problematic products, evaluating personnel performance and reporting inefficiencies to the Executive Sous Chef.
  • Organize weekly schedules for personnel and manage timecards for approval, identifying training needs and ensuring necessary training is delivered.
Qualifications:
  • Education: At least a high school or vocational diploma
