Executive Chef

As a Sous Chef at Fairmont Udaipur Palace, you will be responsible for maintaining ongoing training and development of employees, conducting employee performance reviews, and disciplinary action. You will ensure appropriate staff scheduling and monitor staffing levels in conjunction with determined budgets and forecasting. Additionally, you will create and design menus while keeping the overall restaurant concept in mind. You will liaise with food stores to ensure the proper rotation of foods and seek opportunities to increase food revenue, decrease kitchen expenses, and maximize departmental productivity without compromising guest satisfaction. In the absence of the Executive Chef and Executive Sous Chef, you will oversee kitchen operations. You will also be responsible for maintaining departmental standards in accordance with Fairmont Hotels and Resorts core standards and ensuring effective cooperation between outlets and the kitchen. Furthermore, you will create memorable dining experiences for guests and ensure a clean and safe working environment. You will actively participate in health and safety initiatives and adhere to all hotel environmental policies and initiatives.
Requirements:
• Bachelor of Hotel Management or Diploma in Food Production
• Extensive practical and managerial experience related to the processes in the respective department (at least 5 years)
• At least intermediate level English
• Prior attendance in courses and seminars in the related field
• Basic computer applications
• Excellent command of all products and cooking techniques in the related field and responsible for business development
• Advanced knowledge of the other kitchen sections and processes
• Knowledge of local or international cuisine
• Valid trade qualifications required
• Passion for food and desire to further develop culinary and leadership skills
• Effective supervisor and trainer
• Innovative, detail-oriented, and quality conscious
• Actively seeking knowledge of new trends in presentation and preparation
• Self-motivated, with the ability to make effective decisions
• Demonstrates initiative, and the ability to multitask and work with minimal supervision
• Ability to maintain high service levels under pressure
• Physically fit to lift trays repeatedly, stand and walk for the duration of the shift
• Ability to consistently stand and walk throughout the shift
