Culinary Operations Manager

Rixos Golf Villas And Suites, a stunning destination located in the South Sinai Peninsula, seeks an exceptional Sous Chef Pastry to join its culinary team.
As a Sous Chef Pastry, you will be responsible for the overall operation of the kitchen units, ensuring the highest quality, cost-effectiveness, and customer satisfaction.
- Assist the Executive Sous Chef in managing the kitchen units, adhering to kitchen hygiene rules, and maintaining personal grooming standards.
- Coordinate with section chefs, provide instruction as needed, and control the presentation and quality of food prepared for breakfast, lunch, and dinner.
- Prepare material purchase lists, place orders, and check the quality of purchased ingredients, ensuring efficient circulation of slow-moving supplies.
- Monitor raw foods and provisions, manage excess food usage, and control portion sizes, adhering to FIFO principles.
- Plan food production in accordance with stages identified by the Executive Culinary Chef, ensuring compliance with personal hygiene rules among kitchen personnel.
- Maintain records for the food safety system, check storage areas for orderliness, and manage food usage efficiently.
- Evaluate personnel performance, report inefficiencies to the Executive Sous Chef, and participate in activities to protect biological diversity and promote environmental awareness.
- Implement departmental training to save energy and conduct training on menu preparation, product recipes, and food costs.
Requirements:
- At least a high school or vocational diploma.
- Extensive practical and managerial experience related to the processes in the respective department (at least 5 years).
- At least intermediate level English.
- Prior attendance in courses and seminars in the related field.
- Basic computer applications.
- Excellent command of all products and cooking techniques in the related field, responsible for business development, advanced knowledge of other kitchen sections and processes, and knowledge of local or international cuisine.
