El Hotel
Los reconocidos diseñadores parisinos Gilles & Boissier, han creado un sofisticado diseño residencial para las 100 habitaciones y 53 suites, incluidas varias suites únicas en su tipo, con elementos de diseño únicos inspirados en las conexiones históricas del hotel con la ciudad, la cultura española y arte.

Responsabilidades
Apoyar al Jefe de Cocina del Hotel.
Responsable de la operación diaria de la sección de pan en la cocina de pastelería, incluida la producción, preparación y presentación, garantizar la calidad y la coherencia de la prestación del servicio en consonancia con las iniciativas generales del hotel y los estándares de la marca.
Colabore con los diferentes puntos de venta para crear menús para una amplia variedad de productos horneados estándar y personalizados de acuerdo con las recetas y los procedimientos operativos estándar durante toda la temporada.
Responsable de capacitar y gestionar diariamente a otros compañeros con trabajos de preparación y otras funciones en el departamento de pastelería.
Capacite, entrene y supervise al personal de pastelería y sea capaz de permanecer objetivo y basado en hechos durante las conversaciones de entrenamiento, escalando cuando sea apropiado.
Asigne tareas diarias de producción y no producción (reabastecimiento de artículos de pastelería, limpieza, etc. ) a los miembros del equipo y asegúrese de que las tareas se completen de manera oportuna.
Confirme que todos los alimentos se preparan, manipulan y almacenan de acuerdo con todos los estándares de seguridad alimentaria requeridos.
Requisitos
De preferencia Diplomado en Artes Culinarias, Panadería o Pastelería.
Certificado en HACCP o materias afines.
Capaz de comunicarse en español.
Tres años de experiencia previa en gestión o supervisión en un importante hotel de lujo o en la industria hotelera, obrador de pasteleria.
Historial de liderazgo y desarrollo de equipos.
Posee buen ojo para los detalles y puede ejecutar los estándares en consecuencia.
Habilidad para manejar con mínima supervisión.
Exposición a controles financieros y responsabilidades.
Capacidad de adaptación a un horario flexible según las necesidades del negocio.

The Hotel
Renowned Parisian designers Gilles & Boissier, have created a sophisticated residential design for the 100 rooms and 53 suites, including several one-of-a-kind specialty suites, featuring unique design elements inspired by the hotel's historic connections to the city, Spanish culture and art.
With a stunning and meticulous restoration that celebrates César Ritz's pioneering spirit, a prestigious central location, five restaurants and bars overseen by one of Spain's most celebrated chefs and exceptional leisure and wellness facilities, Mandarin Oriental Ritz, Madrid is set to become the city's most luxurious hotel.
Responsibilities
Support the Head Chef of the Hotel.
Responsible for the daily operation of the bread section in pastry kitchen, including production, preparation and presentation, ensure the quality and consistency of service delivery in alignment with the overall hotel initiatives and brand standards.
Collaborate with the different outlets to create menu for a wide variety of standard and custom baked goods according to recipes and standard operating procedures throughout the season.
Responsible for training and managing other colleagues daily with prep work and other functions in the pastry department.
Train, coach, and supervise pastry staff and being capable of remaining objective and fact-based during coaching conversations, escalating when appropriate.
Assign daily production & non-production tasks (restocking pastry items, cleaning, etc) to team members and ensure tasks are completed in a timely manner.
Confirm all food is prepared, handled and stored according to all required food safety standards.
Requirements
Diploma in Culinary, Baking or Pastry Arts preferred.
Certificate in HACCP or related subjects.
Able to communicate in Spanish.
Three years of previous managerial or supervisory experience in sizeable luxury hotel or hospitality industry.
Track record of leading and developing teams.
Possesses an eye for detail and can execute standards accordingly.
Ability to manage with minimal supervision.
Exposure to financial controls and accountabilities.
Ability to adapt to a flexible schedule according to business needs.
