The Executive Chef has a broad-based knowledge of ethnic cuisines to include Mediterranean (Spanish, French, Italian, Greek), British, American and Australian, Middle East and Asian. The Executive chef has a real passion for food and trying new ingredients and dishes and has mastered all culinary techniques. He/she constantly wants to exceed expectations and finds satisfaction in leading and teaching junior staff. The Executive Chef sets and maintains a high standard across all disciplines in the kitchen.

**QUALIFICATIONS**
- 2-4-year Culinary degree or equivalent formal culinary training
- Level 3 - Food Hygiene & Safety (Supervisors)
- Level 2 - Allergy Awareness
- Level 2 - HACCP
- Safe Chemical Handling
- National Police Clearance (mandatory)
- Fluent English

**EXPERIENCE**
- Private chef experience in a VVIP household held in high regard
- 5+ years’ experience working in an acclaimed 5* restaurant or hotel.
- Experience leading a large team
- International living and working essential
- Middle East experience mandatory

**SKILLS / KNOWLEDGE**
- Excellent broad-based knowledge of all international cuisines.
- Must have excellent working knowledge of Middle Eastern and Asian Cuisines and Fusion cooking. Strong and proven knowledge of cooking philosophies and principles. Must know how to create and present all types of Middle Eastern service.
- Exceptional creativity and presentation of food
- Check the quality of raw or cooked food products to ensure that standards are met.
- Advanced HACCP - adherence and teaching
- Order food or other supplies needed to ensure efficient operation.
- Supervise or coordinate activities of cooks or workers engaged in food preparation.
- Inspect supplies, equipment, or work areas to ensure conformance to established standards.
- Determine how food should be presented and create decorative food displays for events and functions.
- Record keeping - recipe books, guest preferences, and other operational data.
- Collaborate with other staff to plan and develop recipes or menus, taking into account such factors as seasonal availability of ingredients and produce.
- Train staff for how to produce all standard operating recipes.
- Demonstrate new cooking techniques or equipment to staff.
- Arrange for equipment purchases or repairs.
- Advanced Microsoft Office Skills.
