**Key Responsibilities**
- Prepare a wide variety of sushi items, including maki rolls, sashimi, nigiri, and chef's specials.
- Uphold presentation standards with a focus on traditional Japanese aesthetics and creative flair.
- Monitor fish and ingredient quality, ensuring freshness and safe storage practices.
- Maintain a clean, organised sushi station with adherence to HACCP and safety guidelines.
- Collaborate with the Head Sushi Chef on menu development and guest feedback.
- Train junior sushi chefs and ensure consistent performance across the section.
- Monitor prep levels and assist with stock rotation and daily inventory.

**Requirements**:
**What We’re Looking For**
- Minimum 3 years of experience in Japanese or sushi restaurants, ideally within a luxury or fine dining environment.
- Expertise in sushi preparation and fish handling, with strong knife skills.
- In-depth knowledge of Japanese ingredients, condiments, and culinary principles.
- High attention to detail, precision, and plate presentation.
- Calm under pressure and capable of working in an open kitchen or guest-facing setting.
- Fluency in English required; additional language skills a plus.
