Job Summary

As a key member of the Marriott International team, we are seeking a highly skilled and experienced Director of Food and Beverage Operations to lead our culinary team. This strategic business leader will be responsible for developing and implementing departmental strategies, ensuring the food and beverage operation meets the brand's target customer needs, and driving revenue growth and financial performance.

Key Responsibilities
  • Develop and maintain food and beverage goals, including setting expectations and holding the leadership team accountable for demonstrating desired service behaviors.
  • Review financial reports and statements to determine how Food and Beverage is performing against budget, and make recommendations for CAPEX funding of food and beverage equipment and renovations.
  • Work with the food and beverage leadership team to determine areas of concern and develop strategies to improve the department's financial performance.
  • Establish challenging, realistic, and obtainable goals to guide operation and performance, and strive to improve service performance.
  • Develop and manage the Food and Beverage budget, monitor actual and projected sales, and ensure cash control and liquor control policies are in place.
  • Lead the food and beverage team, utilizing interpersonal and communication skills to lead, influence, and encourage others, and advocate sound financial/business decision making.
  • Empower employees to provide excellent guest service, and estimate cost and benefit ratio to maintain balance between profit and service satisfaction.
Requirements
  • High school diploma or GED; 6 years experience in the food and beverage, culinary, event management, or related professional area.
  • Or degree from an accredited university in Food Service Management, Hotel and Restaurant Management, Hospitality, Business Administration, or related major; 5 years previous experience in the same position.
  • Strong leadership and communication skills, with the ability to motivate and inspire a team.
  • Financial skills, with experience in budgeting and cost control.
  • Knowledge of business and management principles, including strategic planning, resource allocation, and human resources modeling.
  • Ability to analyze information and evaluate results to choose the best solution and solve problems.
