Job Summary:

The Sanitation and Hygiene Manager will be responsible for ensuring that all food and beverage employees have a thorough understanding of food safety practices. This includes maintaining immaculate grooming standards, proposing and implementing minimum standards for work areas, stores, receiving, and disposal areas, and conducting regular inspections to ensure compliance with hygiene regulations.

Responsibilities:

  • Food Safety: Ensure that all food and beverage employees have a thorough understanding of food safety practices and maintain records related to sanitation and hygiene efforts.
  • Grooming Standards: Maintain immaculate grooming standards and enforce the property's grooming policy.
  • Hygiene Standards: Propose and implement minimum standards for work areas, stores, receiving, and disposal areas to adhere to required hygiene standards.
  • Record Keeping: Maintain accurate records of sanitation and hygiene efforts, including laboratory test results and daily chlorine tests for pool and tap water.
  • Training and Meetings: Organize monthly food safety meetings and training, distribute information, and ensure that all related teams understand and implement trainings.
  • Vendor Management: Continually liaise with external agencies, including laboratories, government bureaus, health practitioners, and suppliers, on sanitary matters.
  • Quality Control: Conduct spot checks on receiving areas for food hygiene and vendor product quality to ensure the property's criteria is met.
  • Reporting: Create a monthly report of operational hygiene gaps and develop a plan of action to ensure compliance.
  • Staff Development: Develop on-the-job and classroom trainings for culinary, service, and stewarding staff and ensure that each food handler undergoes statutory training.

Requirements:

  • Bachelor's degree in a relevant field (e.g., hospitality, food safety, or a related field)
  • Minimum 3-5 years of experience in a similar role or a related field
  • Proven track record of ensuring compliance with food safety regulations and maintaining high hygiene standards
  • Excellent communication and leadership skills
  • Able to work independently and as part of a team

Salary: $60,000 - $80,000 per annum, depending on experience
