Job Purpose...
At Soho House, the Head Patry Chef oversees the pastry and dessert operations across multiple locations in Barcelona. This role ensures consistency in quality, presentation and innovation of pastry products while maintanining cost control and compliance with food safetly standards. The position involves leadership, training, and collaboration with the production team to uphold brand standards and elevate the guest experience. In conjunction with the EU Executive Chef, General Managers and Head Chefs of each location, the Head Pastry Chef creates and oversees the offer, service standards, operational efficiency to ensure the quality of the product.
Main Duties...
Menu Development & Innovation
- Design and implement seasonal and signature pastry menus across all properties.
- Research global pastry trends and incorporate them into offerings.
- Standardize recipes and presentation guidelines for consistency.
- Develop a SAG amenities Plan for the in house guests with the House Manager.
- Create a specific offer for current or additional smaller outlets such as the gym, the spa or the studio
Quality Control
- Conduct regular audits to ensure adherence to standards.
- Maintain high-quality production and plating across all units.
Training & Development
- Train and mentor the Pastry Chef and his team.
- Develop training programs for new techniques, equipment, and recipes.
- Conduct annual performance meetings.
Operational Management
- Collaborate with procurement to source premium ingredients at optimal cost.
- Monitor inventory, waste, and cost control measures.
- Ensure compliance with health, safety, and sanitation regulations.
- Coordinate the production centre with the different kitchens to ensure that all procedures are followed from the moment an internal order is placed until the dessert is served at the table.
- Oversee the logistics to guarantee the quality of the dishes during the shipping and delivery process.
- Lead and coordinate the dessert service in big events, buy outs and relebant group stays.
Requirements...
- A successful Head Pastry Chef for Soho House will ideally have 3-5 years' experience in a busy high-profile venue and a natural flair for first class service in a similar role..
- Formal culinary education with specialization in pastry arts.
- Minimum 8–10 years of pastry experience, including leadership roles.
- Experience in multi-unit or luxury hospitality operations.
- Strong knowledge of pastry techniques and trends.
- Excellent organizational, leadership, and communication skills.
- Excellent interpersonal skills and ability to build relationships (internal and external)
- Strong attention to details
- Excellent customer service
- Fluent in English
- Organised and reliable
- Ability to work and maximize relationships within a diverse team
- Computer literacy, Micros and Adaco advantageous
Physical Requirements:
- Must be able to seize, grasp, turn and hold objects by hand
- Able to work on your feet for at least 8 hours
- Able to work in different properties as per operational needs.
