**Key Responsibilities**
- Assists the Executive Chef in supervising the day-to-day culinary operations and ensures consistent food quality, presentation and preparation standards.
- Conducts meetings with the Culinary Teams to discuss operational directives and resolve kitchen-related matters.
- Establishes culinary standards, ensuring menus are well executed and aligned with brand expectations.
- Plans and develops menus, preparing recipes for food tasting sessions approved by the Executive Chef or Executive Sous Chef.
- Inspects food stores and refrigerated areas regularly, recommending appropriate storage methods to meet health and safety regulations.
- Monitors spoilage to ensure proper turnover of food items and reports updates to the Executive Chef or Executive Sous Chef.
- Supervises daily food preparation to maintain food quality, appropriate quantities and efficient inventory control.
- Manages the hot plate during service periods, ensuring presentation and quality remain consistent with The Pacha Group’s standards.
- Conducts training on kitchen equipment to support the development and safety of team members.
- Develops internal processes to support consistent culinary standards and smooth operational implementation.
- Stays informed about market trends, new techniques and seasonal ingredients to support menu development.
- Collaborates with the Purchasing Department to ensure the selection of suitable, high-quality ingredients.
- Ensures personal hygiene practices are followed consistently within the kitchen team.
- Oversees the daily logbook, addressing and reporting operational issues and ensuring completion of assigned tasks.
- Maintains documentation, including records and checklists, to support accurate kitchen control and compliance.
- Ensures adherence to relevant health, safety and food hygiene regulations, maintaining full readiness for inspections and audits.
