OverviewMandarin Oriental Punta Negra, Mallorca is looking for an Executive Pastry Chef to join our Culinary Team.About The JobBased at Mandarin Oriental Punta Negra, Mallorca, as the Executive Pastry Chef , you will be responsible for overseeing all day-to-day operations of the pastry and bakery section of the kitchen. Create and bake a wide range of products including cakes, cookies, pies and bread following traditional and modern recipes.ResponsibilitiesDevelop new recipes, innovate and develop new and exciting desserts to enhance the hotel’s menu and engage customers.Lead the administrative management of the pastry team, including effective scheduling, budget control, and compliance with operational standards.Decorate pastries using different icings, toppings to ensure beautiful and appealing presentations.Inventory management, monitor and order ingredients and supplies needed for the pastry section.Health and safety compliance, ensure the pastry section adheres to health and safety regulations.Collaboration, work closely with the Executive Chef and other Kitchen staff to ensure the quality of the products.QualificationsCulinary School / University Degree, with at least 2-3 years' experience as an Executive Pastry Sous Chef, ideally in Luxury Hospitality.Technical SkillsBaking techniques, mastering the fundamentals of baking.Flavor combination, knowing how to balance and combine flavors to create delicious and innovative pastries.Patisserie Expertise, specialising in making a variety of pastries, desserts, breads and other baked goods.Chocolate Sculpting and Sugar Artistry, crafting intricate designs using chocolate and sugar.Food Safety (HACCP), maintaining a clean sanitary work environment and adhering to food safety standards.Menu Development, collaborating with other chefs to develop and update the menu.Plate desserts, designing and presenting desserts in an aesthetically pleasing manner.Creation of desserts in collaboration with the Executive Chef.Our Commitment To YouLearning & Development.
