However, BPA poses significant health and environmental risks. This PhD project aims to develop sustainable and safe alternatives using tomato pomace, a by-product of the fruit processing industry, to create biologically sourced coatings for cans. These new coatings will be enhanced with microcrystalline cellulose and gallate esters for improved mechanical strength, antibacterial properties, and antioxidant capabilities.
