**Job Summary**: Your will be of responsible for implementing the decentralised F&B strategy and defining attributes and products for their hotel, creating innovative and competitive culinary product. To oversee all aspects of the kitchen operations; including menu planning, food costs, payroll cost, goods receiving, hygiene and sanitation recruitment, retention and development of kitchen employees. We are looking for goal-oriented people, organized with medium, long-term business vision in a hotel in constant evolution.
**What will I be doing?**
- Lead and manage the production division of the kitchen
- Collaborates with the Director of F&B on the annual budget, management functions, and strategy of the F&B department to meet daily operational needs.
- Overall responsibility for all operational components of the kitchen division to ensure the efficiency and effectiveness of operations.
- Collaborates with the F&B Director in the development and implementation of the annual F&B business plan and mid-term strategies, as well as the establishment of key performance goals and plans to ensure that the hotel meets its business objectives and drive sustainable and profitable growth.
- The Executive Chef is fully responsible for the execution of food costs according to the monthly budget.
- Actively participates in the strategic marketing approach to ensure restaurant and bar exposure, including developing and implementing the department's annual and monthly promotional calendar.
- Conduct hygiene audits at kitchen outlets to ensure cleanliness and hygiene levels are in line with local laws and brand standards. Ensures that a high level of food safety management and precautions regarding hotel food safety and hygiene standards (HACCP) are adhered to in the department
- He works with the senior culinary team and is responsible for the team developing new menus and product development supported by detailed analysis and accurate costing, based on region and season.
**What are we looking for?**
- Minimum 3 years experience in a similar position is required.
- Diploma in Tourism or similar. Postgraduate studies or master's degree in A&B Management will be a plus.
- Fluency in English and Spanish, a third language will be an asset.
- Orientation to results and to the economic objectives set by the company.
- Experience in team management, leadership, customer orientation, as well as planning and organisational skills.
