Cluster Executive Chef

As a Cluster Executive Chef at Accor Hotels, you will be responsible for leading the culinary department and ensuring the highest possible quality in food preparation, presentation, and menu selection. This role requires a strong leader with excellent leadership skills, fine dining and banqueting experience, and a proven track record of cost control.
Key Responsibilities
• Tour kitchens, stores, and food production facilities to ensure high hygiene and maintenance standards
• Meet daily with culinary management to communicate operational challenges and successes
• Promote a fun, professional, and disciplined work environment
• Support, coach, lead, and motivate kitchen colleagues and managers
• Ensure all kitchen colleagues and managers are aware of standards and expectations
• Ensure proper hygiene and Health Authority standards, promoting Health and Safety at all times
• Conduct daily walkthroughs of hotel kitchens and accompanying areas to ensure proper cleanliness
• Strive to improve all food preparations, presentations, and menu selections
Requirements
• Minimum 3 years experience as an Executive Chef in a 5-star luxury property
• Great and proven leadership skills
• Fine dining and banqueting experience in a 5-star luxury property is a must
• Strong working knowledge of International Cuisine
• Ability to create great guest experiences with a beautiful, vast, and extensive space
• Proven track record of cost control including food, equipment, labor, and wastage to meet the food quality goals and the hotel's financial goals
• Enthusiastic and with an outgoing personality who is very guest-driven
• Demonstrate a real passion for menu planning leadership
• Strong understanding of HACCP Accreditation from a recognized Culinary School
