Sous Chef - Luxury Castle Hotel Ireland

Job Summary

We are seeking a talented and passionate Sous Chef to join our team at a prestigious luxury Irish castle hotel restaurant. Our establishment prides itself on serving modern European cuisine that showcases the finest Irish ingredients. As a Sous Chef, you will work closely with the Head Chef to create exceptional dining experiences for our guests. **Responsibilities**:

- Assist the Head Chef in all aspects of kitchen operations, including food preparation, cooking, and plating, while ensuring the highest standards of taste, presentation, and quality.
- Supervise and train kitchen staff, ensuring proper techniques, safety practices, and compliance with health and sanitation standards.
- Collaborate with the culinary team to develop and refine menu offerings that showcase the best of modern European cuisine with a focus on locally sourced Irish ingredients.
- Maintain inventory levels and ensure proper stock rotation to minimize waste and maintain freshness.
- Participate in the creation of new recipes and menu items, taking into consideration guest preferences and dietary restrictions.
- Uphold strict adherence to all food safety and hygiene regulations, ensuring a clean and organized kitchen environment.
- Monitor and control costs through effective portion control and utilization of ingredients, while maximizing the quality and flavor of dishes.
- Work closely with the front-of-house staff to ensure seamless coordination and exceptional guest experiences.
- Stay up-to-date with culinary trends, techniques, and innovations, continuously seeking opportunities for professional growth and improvement.

**Requirements**:

- Minimum of 3 years of experience in a similar role, preferably in a luxury hotel or fine dining restaurant.
- Extensive knowledge of modern European cuisine.
- Proven ability to deliver consistently high-quality dishes and maintain exceptional presentation standards.
- Strong leadership skills and the ability to work effectively in a fast-paced kitchen environment.
- Excellent communication and interpersonal skills, with the ability to collaborate and coordinate with team members at all levels.
- In-depth understanding of food safety and sanitation standards (HACCP), with the ability to train and enforce proper practices among kitchen staff.
- Flexibility to work evenings, weekends, and holidays as required by the demands of the business.
