As Cook, I fully comprehend the vision of Six Senses to help people reconnect with themselves, others and the world around them, plus our values of local sensitivity and global sensibility, crafted experiences, emotional hospitality, responsible and caring, fun and quirky and pioneering wellness.


_Wellness_

I will fully embrace, implement and safeguard the overall Wellness philosophy, concepts and programs such as Sleep with Six Senses, Eat With Six Senses and Grow With Six Senses.

All aspects of these wellness and initiatives will be adopted and implemented throughout the operation and its strategic planning and development.


_Sustainability_
Sustainability is at the core of everything we do at Six Senses.

I will ensure all directives on environmental protection and preservation, re-usage and minimum wastage, purchasing and packaging such as the abolition of single-use plastic, social responsibility and all other practices documented in the Sustainability Guidelines are followed in the department to maintain a harmonious and sensitive approach to our environment and cultural surroundings.


_ Operational Ownership_
As Cook, I will assume full responsibility for the efficient operation in the following:

  • Prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment.
  • Know and comply consistently with standard portion sizes, cooking methods, quality standards, kitchen rules and guidelines.
  • Stock and maintain sufficient levels of food products at line stations to assure a smooth service period.
  • Follow proper plate presentation and garnish set up for all dishes.
  • Have a complete understanding of, and adhere to the company's policy relating to fire, hygiene and safety.
  • Check incoming produce, ensuring that all food merchandise is in accordance with order sheets, receiving records and purchasing specifications.
  • Record guest complaints, requests and solutions together with any other issues related to personnel, equipment, products, etc. and reports them to the Executive Chef or Executive Sous Chef.
  • Assist in the control of the outlet operational budget, ensuring that all costs are strictly controlled maximizing profitability.
  • Maintain at all times the highest standard of social skills.
  • Report any maintenances faults following the required steps.
  • Maintain efficient administration within the department preparing and submitting operational reports on time.
  • Ensure all equipment and working area are kept clean and in good working condition.
  • Upkeep Six Senses guidelines and standards of service and operation. My performance benchmarks are maintained and exceeded.
  • Strictly adhere to LQA standards and guest comments.

Skills and Experience_**To execute the position of Cook, I have the required qualifications, technical skills and more than two years' experience in a similar role in luxury hotels with proven results.

I possess a minimum of a Diploma in Culinary Arts or similar.


In terms of the frontline kitchen management, I have an intuitive sense of product and service quality, a passion for excellence and an understanding of the sophisticated needs of the luxury customer.


Technical skills include advanced MS Office platform, plus I have an excellent command of written and spoken English with some knowledge of the local language and customs.


I have knowledge of the use of broiler equipment and understanding of meat and fish cookery, proficient knife skills and understand farm to table concept.


I will maintain a thorough understanding of Six Senses in terms of guidelines, rules and regulations, operating standards, facilities and services.
